Homemade Pepper Chicken Recipe

Ingredients:

  • 500g chicken, cut into pieces (boneless or bone-in)
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2-3 green chilies, slit (adjust to taste)
  • 2 tomatoes, finely chopped or pureed
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp red chili powder (adjust to taste)
  • 1 tsp black pepper powder (freshly ground for best flavor)
  • 1 tsp garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)
  • 1/2 cup water or chicken stock
  • 1 tbsp lemon juice

Instructions:

1. Marinate the Chicken:

  • In a bowl, mix the chicken pieces with 1/2 tsp turmeric powder, salt, and a little lemon juice. Let it marinate for about 20 minutes.

2. Cook the Chicken:

  • Heat oil in a large pan or wok over medium heat.
  • Add cumin seeds and let them splutter for a few seconds.
  • Add the chopped onions and sauté until they turn golden brown.
  • Stir in the ginger-garlic paste and cook for another minute until fragrant.
  • Add the green chilies and chopped tomatoes. Cook for 5-7 minutes until the tomatoes soften and the oil separates.

3. Add the Spices:

  • Sprinkle in the turmeric powder, coriander powder, cumin powder, and red chili powder. Mix well and cook for 2 minutes to allow the spices to blend.

4. Cook the Chicken:

  • Add the marinated chicken pieces to the pan. Stir well to coat the chicken in the spices.
  • Cook the chicken for about 10-15 minutes, stirring occasionally, until it turns golden and the chicken is cooked through.

5. Add Pepper and Simmer:

  • Sprinkle the freshly ground black pepper and garam masala over the chicken. Add water or chicken stock to create a slightly thick gravy.
  • Cover and cook for another 5-7 minutes on low heat to let the flavors meld.

6. Finish the Dish:

  • Taste and adjust the seasoning. If you like it spicier, add more black pepper or red chili powder.
  • Garnish with fresh coriander leaves and a squeeze of lemon juice.

7. Serve:

  • Serve hot with steamed rice, roti, or naan for a complete meal.

Serving Suggestions:

Pepper Chicken pairs wonderfully with plain rice or butter naan. It can also be served alongside a fresh salad or raita to balance out the heat. Enjoy this aromatic, spicy chicken dish that brings a burst of flavor in every bite!
