    Madras Mix Veg – Vegan is a delicious South Indian vegetable curry that brings together a variety of fresh vegetables in a tangy, spiced coconut-based gravy. This flavorful dish is easy to make and perfect for a wholesome, plant-based meal.


    Ingredients

    For the Vegetable Base:
    • 2 medium potatoes, peeled and diced

    For the Tempering (Tadka):
    • 2 tbsp vegetable oil

    • 1/2 tsp turmeric powder
    • 1/2 tsp red chili powder
    • 1/2 tsp coriander powder
    • 1/2 tsp garam masala (optional)
    For Garnish:
    • Fresh cilantro leaves, chopped

    Instructions

    Step 1: Prepare the Vegetables
    1. Wash and peel the vegetables (potatoes, carrots, beans, peas, and cauliflower). Chop them into bite-sized pieces.
    2. Set the vegetables aside.
    Step 2: Make the Tadka (Tempering)
    1. Heat the oil in a large pan or kadhai over medium heat.
    2. Add the mustard seeds and cumin seeds. Let them splutter.
    3. Add the curry leaves and sauté for a few seconds.
    4. Add the chopped onions and sauté until golden brown.
    Step 3: Cook the Vegetables
    1. Add the tomatoes, green chili, turmeric powder, red chili powder, coriander powder, and a pinch of salt. Stir and cook until the tomatoes soften and the oil begins to separate from the masala (spice mixture).
