Homemade Dakshin Special Shrimp Biryani Recipe

Ingredients

  • For Shrimp Marinade:
    • 500g fresh shrimp, peeled and deveined
    • 1/2 cup yogurt
    • 1 tsp turmeric powder
    • 1 tsp red chili powder
    • 1 tsp garam masala
    • 1 tbsp lemon juice
    • 1 tbsp ginger-garlic paste
    • Salt to taste
  • For Rice:
    • 2 cups basmati rice
    • 4 cups water
    • 1 bay leaf
    • 4 cardamom pods
    • 2 cloves
    • 1 cinnamon stick
    • Salt to taste
  • For Biryani Masala:
    • 2 medium onions, thinly sliced
    • 2 tomatoes, finely chopped
    • 1/2 cup thick yogurt
    • 1 tsp ginger-garlic paste
    • 2 green chilies, slit
    • 1 tsp turmeric powder
    • 1 tsp red chili powder
    • 1 tsp coriander powder
    • 1/2 tsp cumin powder
    • 1 tsp garam masala
    • Fresh coriander and mint leaves, chopped
    • 3 tbsp ghee or oil
  • For Garnish:
    • 1/4 tsp saffron soaked in 2 tbsp warm milk
    • Fried onions (optional)

Instructions

  1. Marinate the Shrimp:
    • Combine yogurt, turmeric, red chili powder, garam masala, lemon juice, ginger-garlic paste, and salt in a bowl.
    • Add shrimp, coat well, and let it marinate for 30 minutes.
  2. Cook the Rice:
    • Rinse and soak basmati rice for 30 minutes.
    • Boil water with bay leaf, cardamom, cloves, cinnamon, and salt.
    • Cook rice until it is 70% done. Drain and set aside.
  3. Prepare the Biryani Masala:
    • Heat ghee or oil in a pan and sauté onions until golden brown.
    • Add ginger-garlic paste, green chilies, and tomatoes. Cook until the tomatoes soften and the oil separates.
    • Add turmeric, red chili powder, coriander powder, cumin powder, and garam masala. Stir well.
    • Add the marinated shrimp and cook for 5-7 minutes, ensuring the shrimp is tender and flavorful.
  4. Layer the Biryani:
    • In a heavy-bottomed pot, layer half of the rice at the bottom.
    • Add the shrimp masala as the second layer.
    • Top with the remaining rice.
    • Drizzle saffron milk and garnish with fresh coriander, mint, and fried onions.
  5. Dum Cooking:
    • Cover the pot with a tight lid or seal it with dough to trap the steam.
    • Cook on low heat for 20-25 minutes to allow the flavors to meld together.
  6. Serve:
    • Gently fluff the layers before serving. Pair with a side of raita, salan, or lemon wedges for a refreshing contrast.
