    Ingredients

    • 500g okra (bhindi), washed, dried, and cut into 1-inch pieces
    • 2 tbsp vegetable oil
    • 1 tsp cumin seeds
    • 1 medium onion, finely chopped
    • 1 medium tomato, finely chopped or pureed
    • 1 green chili, slit (optional)
    • 1 tsp ginger-garlic paste
    • 1/2 tsp turmeric powder
    • 1 tsp coriander powder
    • 1/2 tsp cumin powder
    • 1/2 tsp red chili powder (adjust to taste)
    • 1 tsp garam masala
    • Salt to taste

    Instructions

      • Add the chopped or pureed tomatoes and cook until they soften and the oil starts to separate, about 5 minutes.
    4. Add the Spices:

      • Mix in turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cook for 1-2 minutes to combine the spices with the onion-tomato base.
    5. Combine the Okra:

      • Add the sautéed okra to the masala mixture. Stir gently to coat the okra with the spices, being careful not to break the pieces.
      • Sprinkle garam masala over the dish and mix well.
      • Cover and cook for another 5-7 minutes on low heat, allowing the flavors to blend and the okra to absorb the masala.
