Homemade Bhatura Chole Recipe

Ingredients

For the Bhatura:

  • 2 cups refined flour (maida)
  • 2 tbsp semolina (optional, for texture)
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup yogurt
  • 1/4 tsp salt
  • Warm water, as needed
  • Oil, for deep frying

For the Chole:

  • 1 cup dried chickpeas (soaked overnight) or 2 cups canned chickpeas
  • 1 medium onion, finely chopped
  • 2 tomatoes, pureed
  • 2 green chilies, slit
  • 1 tbsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 1/2 tsp red chili powder (adjust to taste)
  • 1 tsp amchur powder (dry mango powder)
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves, chopped (for garnish)

Instructions

For the Bhatura:

  1. Prepare the Dough:
    • Mix the flour, semolina, baking powder, baking soda, and salt in a bowl. Add yogurt and mix. Gradually add warm water to knead a soft, smooth dough. Cover and let it rest for 2-3 hours.
  2. Roll and Fry:
    • Divide the dough into small balls and roll each into a thin oval or circle.
    • Heat oil in a deep frying pan and fry the Bhaturas one at a time until golden and puffed. Remove and drain excess oil on paper towels.

For the Chole:

  1. Cook the Chickpeas:
    • If using dried chickpeas, pressure cook them with water and a pinch of salt until soft. If using canned, drain and rinse thoroughly.
  2. Prepare the Masala Base:
    • Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden.
    • Add ginger-garlic paste and cook for another minute. Stir in the pureed tomatoes and green chilies. Cook until the oil separates.
  3. Add Spices and Cook:
    • Add turmeric, coriander powder, red chili powder, and salt. Mix well. Add the cooked chickpeas and their water (or regular water) to create a gravy. Simmer for 10-15 minutes.
  4. Finish:
    • Stir in garam masala and amchur powder. Cook for 2-3 more minutes. Garnish with fresh coriander leaves.
